Sweet Potato Goo

A sweetly scrumdiddlyumptious dish that can be enjoyed as a side or even a dessert


Ingredients

  • 3 cup cold mashed sweet potatoes
  • 1 cup sugar
  • ½ cup milk
  • ¼ cup butter (softened)
  • 3 eggs
  • 1 tsp salt
  • 1 tsp vanilla extract

Topping

  • ½ cup packed brown sugar
  • ½ cup chopped pecans
  • ¼ cup flour
  • 2 tbsp cold butter

Directions

  1. In mixing bowl. beat sweet potatoes, sugar, milk, butter, eggs, salt and vanilla until smooth
  2. Transfer to baking dish
  3. In a small bowl combine brown sugar, pecans and flour. Cut in butter until crumbly and then sprinkle over potato mixture
  4. Bake uncovered at 325 for for 45-50 minutes or until golden brown
