Cheesy Queso

Ingredients

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup homogenized (3.25%) milk
  • 1 ½ cup shredded cheese (any kind you like)
  • ¼ tsp salt
  • 1 can of chilies
  • chopped jalapeno (as much as you want depending on spice level)
  • ¼ tsp chili powder (optional)

Directions

  1. Add butter and flour to a small pot. Whisk mixture until bubbly and foamy. Continue to cook whisk for about 60 seconds
  2. While butter and flour are cooking, add in jalapeno and can of chilies to cook. Whisk for about a minute or so
  3. Whisk milk into mixture and allow milk to come to a simmer while whisking
  4. Once mixture with milk is thick enough to coat a spoon, turn off heat
  5. Stir in shredded cheese a handful at a time until melted into the sauce. Put on low heat if needed to help cheese melt
  6. Add in salt and optional chili powder once all the cheese is melted into the sauce. Whisk in more milk if mixture becomes too thick
