Cheesy Queso
Ingredients
- 2 tbsp butter
- 2 tbsp flour
- 1 cup homogenized (3.25%) milk
- 1 ½ cup shredded cheese (any kind you like)
- ¼ tsp salt
- 1 can of chilies
- chopped jalapeno (as much as you want depending on spice level)
- ¼ tsp chili powder (optional)
Directions
- Add butter and flour to a small pot. Whisk mixture until bubbly and foamy. Continue to cook whisk for about 60 seconds
- While butter and flour are cooking, add in jalapeno and can of chilies to cook. Whisk for about a minute or so
- Whisk milk into mixture and allow milk to come to a simmer while whisking
- Once mixture with milk is thick enough to coat a spoon, turn off heat
- Stir in shredded cheese a handful at a time until melted into the sauce. Put on low heat if needed to help cheese melt
- Add in salt and optional chili powder once all the cheese is melted into the sauce. Whisk in more milk if mixture becomes too thick
