Moroccan Lemon Chicken

Lemon-rific chicken dish. Million years dungeon if you don’t enjoy!


Ingredients

Spice Mix

  • 5 cloves garlic, minced
  • 1 giant pinch of saffron threads
  • ½ tsp ground ginger
  • 1 tsp sweet paprika
  • ½ tsp cumin
  • ½ tsp turmeric
  • salt and pepper

Chicken

  • 1 lb boneless, skinless chicken thighs
  • 2 medium onions, sliced
  • 1 cinnamon stick
  • ⅔ cup kalamata olives, pitted and roughly chopped
  • ⅔ cup green olives, pitted and roughly chopped
  • 1 large preserved lemon, pulsed in food processor
  • 1 cup chicken stock
  • 2 tbsp preserved lemon juice
  • chopped fresh parsley, for topping
  • ½ cup raisins (optional)

Directions

  1. Make 1-2 cups of rice with 1 tsp of turmeric per cup of rice
  2. Place chicken thighs in large bowl and add spice ingredients on top. Rub the chicken throughout to incorporate the spices
  3. Sear chicken off in wok for 2-3 minutes on each side
  4. Remove chicken from wok and add onion to wok and cook down
  5. Once onions are cooked down add the rest of the ingredients and then add chicken back on top. Put lid on and simmer for 45 minutes
  6. Serve over rice
