Miso Roasted Frenched Rack of Lamb

For a special Easter or spring treat, consider the lusciousness of lamb. This recipe will make mouths water.
Ingredients
- 2 tbsp butter, softened
- ½ cup miso paste
- 1 tbsp fresh ginger, minced
- 1 tbsp fresh garlic, minced
- 1 tbsp rice vinegar
- 2 tbsp honey
- 1 Frenched Rack of Lamb
- 1 tsp freshly ground black pepper
- 2 green onions, finely sliced
- 1 tsp sesame seeds, toasted
Directions
- Preheat oven to 375 F
- In a medium bowl, combine butter, miso, ginger, garlic, rice vinegar and honey. Stir together to make a paste. Using your hands, massage paste onto rack of lamb.
- Place rack skin side up in an ovenproof dish. Sprinkle with pepper and roast for 15 minutes.
- Cover loosely with foil and continue to cook an additional 15 to 20 minutes for medium-rare, or until the internal temperature registers 145 F
- Remove from oven and allow to sit for 10 minutes before slicing
- Slice, top with green onions and sesame seeds
- Serve
