Miso Roasted Frenched Rack of Lamb

For a special Easter or spring treat, consider the lusciousness of lamb. This recipe will make mouths water.


Ingredients

  • 2 tbsp butter, softened
  • ½ cup miso paste
  • 1 tbsp fresh ginger, minced
  • 1 tbsp fresh garlic, minced
  • 1 tbsp rice vinegar
  • 2 tbsp honey
  • 1 Frenched Rack of Lamb
  • 1 tsp freshly ground black pepper
  • 2 green onions, finely sliced
  • 1 tsp sesame seeds, toasted

Directions

  1. Preheat oven to 375 F
  2. In a medium bowl, combine butter, miso, ginger, garlic, rice vinegar and honey. Stir together to make a paste. Using your hands, massage paste onto rack of lamb.
  3. Place rack skin side up in an ovenproof dish. Sprinkle with pepper and roast for 15 minutes.
  4. Cover loosely with foil and continue to cook an additional 15 to 20 minutes for medium-rare, or until the internal temperature registers 145 F
  5. Remove from oven and allow to sit for 10 minutes before slicing
  6. Slice, top with green onions and sesame seeds
  7. Serve
