Gluten Free Chocolate Cake/Cupcakes

This recipe can be used for either cake or cupcakes


Ingredients

  • 2 cup (plus 2 tbsp) flour
  • ¾ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 2 cup sugar
  • 4 eggs, room temperature
  • 1 cup vegetable oil
  • 2 ½ tsp vanilla extract
  • 1 ¼ cup water, room temperature

Directions

  1. Preheat oven to 325 degrees, grease baking pan and set aside
  2. In stand mixer, mix together flour, cocoa powder, baking powder, baking soda, salt and sugar
  3. Add eggs, oil, vanilla and water until combined. Batter will be runny
  4. Fill baking pan with batter and bake 16-18 minutes or until a toothpick comes out clean
