Gluten Free Chocolate Cake/Cupcakes

This recipe can be used for either cake or cupcakes
Ingredients
- 2 cup (plus 2 tbsp) flour
- ¾ cup unsweetened cocoa powder
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp salt
- 2 cup sugar
- 4 eggs, room temperature
- 1 cup vegetable oil
- 2 ½ tsp vanilla extract
- 1 ¼ cup water, room temperature
Directions
- Preheat oven to 325 degrees, grease baking pan and set aside
- In stand mixer, mix together flour, cocoa powder, baking powder, baking soda, salt and sugar
- Add eggs, oil, vanilla and water until combined. Batter will be runny
- Fill baking pan with batter and bake 16-18 minutes or until a toothpick comes out clean
