Enchiladas

Cheesy chicken enchiladas
Ingredients
- 3 tbsp butter
- 3 tbsp flour
- 2 cup chicken broth
- 1 cup greek yogurt
- 1 can of chilies
- 2-3 cup cooked chicken breasts, shredded
- 2 ½ cup shredded cheese
- 12 soft tortilla shells
Directions
- Preheat oven to 350 degrees
- In a pan on the stove, melt butter and stir in flour. Cook for 2-3 min
- Add chicken broth and let cook for a while until bubbling
- Take off heat and add yogurt and chilies. Put back on heat and cook for a bit
- Fill tortilla shells with chicken and cheese and place in foil lined 9x13 pan
- Pour sauce over top of tortillas and sprinkle cheese over
- Cook at 350 for 22 minutes and then broil on high for another 2-3 minutes
- Let cool before enjoying
