Enchiladas

Cheesy chicken enchiladas


Ingredients

  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cup chicken broth
  • 1 cup greek yogurt
  • 1 can of chilies
  • 2-3 cup cooked chicken breasts, shredded
  • 2 ½ cup shredded cheese
  • 12 soft tortilla shells

Directions

  1. Preheat oven to 350 degrees
  2. In a pan on the stove, melt butter and stir in flour. Cook for 2-3 min
  3. Add chicken broth and let cook for a while until bubbling
  4. Take off heat and add yogurt and chilies. Put back on heat and cook for a bit
  5. Fill tortilla shells with chicken and cheese and place in foil lined 9x13 pan
  6. Pour sauce over top of tortillas and sprinkle cheese over
  7. Cook at 350 for 22 minutes and then broil on high for another 2-3 minutes
  8. Let cool before enjoying
