Light and fluffy crepe recipe. Fill with whatever ingredients you desire – ham & cheese, nutella, fruits, etc

Ingredients

  • 1 cup flour
  • 2 tbsp sugar
  • 1 pinch salt
  • 2 eggs
  • 1 ½ cup milk
  • 1 tbsp unsalted butter, melted
  • softened butter, for cooking (or cooking spray works as well)

Directions

  1. Combine flour, sugar and salt in a bowl. Whisk in eggs and 1/2 cup of milk until smooth. Gradually add in remaining milk (stirring constantly). Whisk in melted butter
  2. Heat non stick skillet over medium heat. Once skillet is hot, brush with softened butter or spray with cooking spray
  3. Transfer batter to liquid measuring cup and start to pour batter in the center of the skillet. Tilt skillet so batter evenly covers the bottom in a thin layer. Once the edges start to peel and it begins to brown, flip with spatula. Cook other side for about 10 seconds or so until completely cooked through
  4. Place cooked crepes on a plate as you go and cover with paper towel or tin foil to keep from drying out
  5. Once all crepes have been cooked, start assembling with ingredients you choose
  6. Fill middle of crepes and then fold each side in to the middle
  7. Put back on skillet to heat up
