Chocolate Old-Fashioned Donuts

Glazed chocolate donuts


Ingredients

  • 1 ¾ cup flour
  • ½ cup cocoa powder
  • ¼ cup cornstarch
  • 1 ½ tsp baking powder
  • 1 tsp salt
  • ¼ tsp nutmeg
  • ½ cup sugar
  • 3 tbsp butter, room temperature
  • 2 egg yolks
  • 1 cup sour cream, room temperature
  • canola oil (for frying)

Glaze

  • ¼ cup milk
  • 2 ½ cup powdered sugar
  • pinch of salt
  • 1 tsp vanilla

Directions

  1. In a large bowl, whisk together flour, cocoa powder, cornstarch, baking powder, 1 teaspoon salt and nutmeg until well combined
  2. In a separate bowl, using a hand or stand mixer (with the paddle attachment) beat sugar and butter on medium until mixture appears sandy. Beat in egg yolks on medium until mixture is thickened (about 1-2 min). Alternating with sour cream, add flour mixture in three additions - beating after each addition until batter is well combined
  3. Cover batter and refrigerate at least 1 hour, up to 4 hours - until batter is slightly firm
  4. Flour rolling surface and roll dough to 1/2 inch thickness. Use well floured donut cutter to cut donuts and donut holes
  5. Fry donuts in batched of 3 at a time for about 2 minutes on each side until dough is puffed and cooked through
  6. Transfer cooked donuts to paper towel lined baking sheet to drain excess oil
  7. In a small saucepan over low heat, heat milk to just below a simmer. Remove from heat and whisk in powdered sugar, salt and vanilla until smooth. Dunk donuts in glaze coating both sides. Transfer to cooling rack with something to catch excess glaze
