Chocolate Old-Fashioned Donuts

Glazed chocolate donuts
Ingredients
- 1 ¾ cup flour
- ½ cup cocoa powder
- ¼ cup cornstarch
- 1 ½ tsp baking powder
- 1 tsp salt
- ¼ tsp nutmeg
- ½ cup sugar
- 3 tbsp butter, room temperature
- 2 egg yolks
- 1 cup sour cream, room temperature
- canola oil (for frying)
Glaze
- ¼ cup milk
- 2 ½ cup powdered sugar
- pinch of salt
- 1 tsp vanilla
Directions
- In a large bowl, whisk together flour, cocoa powder, cornstarch, baking powder, 1 teaspoon salt and nutmeg until well combined
- In a separate bowl, using a hand or stand mixer (with the paddle attachment) beat sugar and butter on medium until mixture appears sandy. Beat in egg yolks on medium until mixture is thickened (about 1-2 min). Alternating with sour cream, add flour mixture in three additions - beating after each addition until batter is well combined
- Cover batter and refrigerate at least 1 hour, up to 4 hours - until batter is slightly firm
- Flour rolling surface and roll dough to 1/2 inch thickness. Use well floured donut cutter to cut donuts and donut holes
- Fry donuts in batched of 3 at a time for about 2 minutes on each side until dough is puffed and cooked through
- Transfer cooked donuts to paper towel lined baking sheet to drain excess oil
- In a small saucepan over low heat, heat milk to just below a simmer. Remove from heat and whisk in powdered sugar, salt and vanilla until smooth. Dunk donuts in glaze coating both sides. Transfer to cooling rack with something to catch excess glaze
