Delicious cheesy chicken fritters
Ingredients
Chicken fritters
- 1 ½ lb (3) large chicken breasts
- 2 eggs
- ⅓ cup mayonnaise
- ⅓ cup all purpose flour (substitute for gluten free flour if needed )
- 1 ⅓ cup shredded cheese
- 1 ½ tbsp dill
- ½ tsp salt
- ⅛ tsp black pepper
- 2 tbsp oil (to saute)
Garlic Aioli Dip (Optional)
- ⅓ cup mayonnaise
- 1 garlic clove pressed (or 1 tsp minced garlic)
- ½ tbsp lemon juice
- ¼ tsp salt
- ⅛ tsp black pepper
Directions
- Dice chicken into 1/3" thick pieces (or use meat grinder if available) and place in bowl
- Add remaining batter ingredients and mix until well combined
- Cover mixture and refrigerate for at least 2 hours or overnight
- If cooking in the oven - Preheat oven to 425 degrees
- Line baking sheet with parchment paper
- Add chicken mixture to baking sheet in whatever size you would like and flatten out
- Put in oven for 25 minutes or until chicken is golden brown/cooked thoroughly
- If cooking in a frying pan - Heat large non stick pan over medium heat and add oil
- Add chicken mixture a heaping tablespoon at a time and slightly flatten out
- Cook for 3-4 minutes on each side or until outside is golden brown and chicken is fully cooked through
