Ingredients

Chicken fritters

  • 1 ½ lb (3) large chicken breasts
  • 2 eggs
  • ⅓ cup mayonnaise
  • ⅓ cup all purpose flour (substitute for gluten free flour if needed )
  • 1 ⅓ cup shredded cheese
  • 1 ½ tbsp dill
  • ½ tsp salt
  • ⅛ tsp black pepper
  • 2 tbsp oil (to saute)

Garlic Aioli Dip (Optional)

  • ⅓ cup mayonnaise
  • 1 garlic clove pressed (or 1 tsp minced garlic)
  • ½ tbsp lemon juice
  • ¼ tsp salt
  • ⅛ tsp black pepper

Directions

  1. Dice chicken into 1/3" thick pieces (or use meat grinder if available) and place in bowl
  2. Add remaining batter ingredients and mix until well combined
  3. Cover mixture and refrigerate for at least 2 hours or overnight
  4. If cooking in the oven - Preheat oven to 425 degrees
  5. Line baking sheet with parchment paper
  6. Add chicken mixture to baking sheet in whatever size you would like and flatten out
  7. Put in oven for 25 minutes or until chicken is golden brown/cooked thoroughly
  8. If cooking in a frying pan - Heat large non stick pan over medium heat and add oil
  9. Add chicken mixture a heaping tablespoon at a time and slightly flatten out
  10. Cook for 3-4 minutes on each side or until outside is golden brown and chicken is fully cooked through
