Cheeseburger Gnocchi

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • ½ tsp each salt and pepper
  • 1 tsp each onion powder and paprika
  • ¼ tsp cayenne
  • 1 tsp minced garlic
  • 1 cup tomato sauce (8 oz can)
  • ½ cup beef broth
  • ½ cup heavy cream
  • 18 oz package shelf stable gnocchi (1 pkg of the Vita Sana brand works)
  • 1 cup shredded cheese (any kind)
  • 4 slices of bacon (cooked and chopped)
  • chopped green onions (for garnish)

Directions

  1. Cook bacon, drain grease, chop into small pieces and set aside
  2. Brown ground beef in a skillet over medium high heat. Add chopped onion, salt, pepper, onion powder, paprika and cayenne
  3. Once meat is cooked through, drain any extra grease and then add minced garlic, tomato sauce, beef broth, heavy cream and gnocchi
  4. Stir everything well and once it starts bubbling, cover with a lid and lower heat to medium low. Cook for about 5 minutes covered
  5. Remove lid and check to make sure gnocchi is tender, stir well. Top with the shredded cheese and bacon and let sit on stove until the cheese melts. Or pop in the oven for a few minutes to melt cheese
  6. Once cheese is melted, top with green onions and enjoy
