Cajun Chicken Pasta

Ingredients

  • 1 tbsp oil
  • 2 boneless skinless chicken breast
  • 1 ½ tsp salt (divided)
  • 1 tsp brown sugar
  • 2 tsp cajun seasoning
  • 1 medium onion (finely diced)
  • 4 cloves of garlic (finely minced)
  • 1 tsp italian seasoning
  • 2 ½ cup chicken broth
  • 1 can diced tomatoes (14 oz)
  • ½ cup heavy whipping cream
  • 3 cup penne pasta (uncooked - about 300 grams)

Directions

  1. Heat oil in large skillet over medium-high heat
  2. While pan is heating, slice chicken breast
  3. Combine cajun seasoning, 1 tsp salt and brown sugar. Season chicken and add to hot pan. Cook until browned on both sides, about 3 mins per side
  4. Remove chicken from pan and keep warm. Add onion and sautee until softened and starting to brown
  5. Add garlic, italian seasoning and remaining 1/2 tsp salt and cook 1 minute
  6. Add broth, tomatoes and cream and bring to a simmer over medium-high heat
  7. Add dry pasta and browned chicken and bring to a boil (if chicken is cooked through, you can add at the end). Cover and reduce heat so that the liquid is simmering, about medium-low. Stir often to prevent pasta from sticking
  8. If pasta is nearly ready but there is still a lot of liquid, remove lid and finish cooking
  9. When pasta is cooked to desired tenderness, it is ready to serve
