Bacon & Brussels Sprouts (Good for special occasions & midweek dinner)


Ingredients

  • 4 strips thick-cut bacon
  • 2 tbsp butter
  • 1 lb brussels sprouts
  • 1/2 large onion (chopped)
  • Salt & freshly ground pepper

Directions

  1. Cook bacon in a large skillet over medium high heat until crispy
  2. Remove to a paper towel-lined plate
  3. Roughly chop
  4. In same pan with bacon fat, melt butter over high heat
  5. Add onions & Bussels Sprouts and cook, stirring occasionally until sprouts are golden brown (8 to 10 minutes)
  6. Season with salt & pepper to taste
  7. Toss bacon into pan
  8. Serve immediately
